Tom and Regina Burns embarked on a culinary adventure when they launched their food truck, the Traveling Bison, a homage to both their roots and the local community in McCook. Regina's expertise in crafting the perfect pizza crust comes from years of dedication and experimentation. Drawing on her East Coast background and a longing for the distinct pizza style, Regina developed a dough with qualities reminiscent of sourdough—easy on the stomach and bursting with flavor. Her commitment to freshness means the dough is made fresh daily, ensuring every pizza served at the Traveling Bison is a delightful experience.
Meanwhile, Tom's passion for Bison burgers led him on a quest to create the ultimate Bison Burger. After numerous trials and tastings, he struck gold with a burger that has captivated customers with its lean, flavorful Bison meat. The couple takes pride in using fresh, locally sourced Bison meat, strictly grass-fed from Broken Bow. The Traveling Bison menu features a variety of Bison burgers, including Regina's personal favorite, the Pizza Burger, topped with crispy pepperoni and mozzarella cheese sticks—a creative twist on a classic favorite.

They appreciate input from their customers. “We are always looking for that critique so we can be better,” Tom said, adding that they have yet to receive a bad review. His favorite comment so far was on Facebook, it read, "Bring a towel!" Tom laughed, “I almost want to frame that one.” He said
As they cater to the community, Tom will continue his work as a truck driver while Regina manages the day-to-day operations of the food truck. “It's my baby,” said Regina. Tom has been more involved in the last three months than they anticipated. His contributions, including making TikToks have evolved the business into something they didn't originally invision. “I’ve been very thankful,” Regina said of Tom's involvment. With dreams of expanding into a brick-and-mortar restaurant, Regina's lifelong passion for feeding people has found a home in the Traveling Bison food truck. The joy she finds in sharing her food is evident and resonates with satisfied customers.
